Instead of added 50 (or more) IP addresses to our firewall to allow
our WSUS to try to sync to, is there a way to tell our WSUS to go to a
specific server to get updates? It seems to be trying a huge set of
addresses, and by the time I add that address to our firewall, it's
trying another one...

There is no way to select a particular IP address. The set of IP addresses is
subject to change in any case.

If you're not allowed to configure the firewall to allow the WSUS server to
contact any IP address, you can configure WSUS to use a proxy server; presumably
your proxy server has unrestricted access through the firewall?
